Cake batter

  • 100 g Mixed Nuts, Up to 150g - whatever you need to use up!
  • 200 g Zucchini and/or carrot, Unpeeled. Add up to 250g
  • 2 eggs
  • 200 g sugar
  • 40 g oil, Any mild flavoured type
  • 70 g SR flour, OR add an extra 2 teaspoons of b.p.
  • 0.5 teaspoon baking powder
  • 1 teaspoon bicarbonate of soda
  • 1 teaspoon ground cinnamon, Be generous!
  • 70 g sultanas, raisins, etc, Whatever's in the pantry
  • 1 teaspoon vanilla essence
  • 3 tablespoons pumpkin seeds

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Make batter
  1. Roughly chop nuts - 2 sec, speed 7.  You want them fairly coarse still.  Set aside.

    Chop vegetables, 5 sec, speed 6.  You can chop more finely than this if you are attempting to hide them from fussy eaters!

    Scrape down bowl.

    Add eggs, sugar, oil.  Mix 6 sec, speed 4.

    Add flour, b.p., bicarb, cinnamon.  Mix 10 sec, speed 4.

    Add vanilla. Mix 2 sec, speed 4.

    Add fruit and nuts.  Mix 5 sec, speed 4.

    Tip into prepared tin.  Sprinkle with pumpkin seeds, and bake for 55 minutes or until knife comes out fairly clean - you want it fairly moist still.

    Cool in tin 20 minutes in loaf tin before cooling on a wire rack - or eating warm and delicious!

    Freezes well - if it lasts!
