Lemon & Cream Cheese Scrolls with Vanilla Glaze

Ingredients

12 portion(s)

Dough

  • Zest 1 lemon
  • 300 grams Milk
  • 50 grams honey
  • 2 tsp instant dried yeast
  • 1 tsp salt
  • 80 grams unsalted butter
  • 1 tsp Vanilla paste or extract
  • 1 egg
  • 650 grams bakers flour

Filling

  • 250 grams cream cheese
  • 200 grams Lemon Butter

Glaze

  • 150 grams sugar
  • 1 tsp Vanilla paste or extract
  • 1-2 tbsp Boiling water

Recipe's preparation

    Dough
  1. Place lemon zest in TM bowl and pulverise for 10 sec / speed 10. Add milk, honey and yeast and warm at 37C / 2 min / speed 1.

  2. Add salt, butter, vanilla, egg and flour and mix 10 sec / speed 7.

    Set dial to closed lid position Closed lid and knead for 3 min/ Interval speed Dough mode.

  3. Remove dough and let prove for 30 - 60 minutes.

  4. Filling
  5. Mix the cream cheese and half the lemon butter in the TM bowl 5 sec / speed 5.

     

    Roll out dough into large rectangle 1 cm thick and spread with cream cheese filling and then spread remainder of lemon butter lengthwise in the centre of the dough.

     

    Roll up tightly into log from long end and cut into 12 portions with a serrated knife.

     

    Place in slice tin (20 x 30 cm). Brush with mixture of beaten egg and 1 tbsp water and leave to rise for 30 - 60 minutes in a warm place.

     

    Bake in 190C oven for 30 minutes, covering with foil half way through cooking if browning too much.

  6. Glaze
  7. Place sugar in TM bowl and mill 20 sec / speed 9 into icing sugar.

     

    Add vanilla and 1 tbsp of boiling water and mix 5 sec / speed 4, adding more water if needed to get a good drizzling consistency.

     

    Drizzle icing over warm scrolls.

    I was really looking forward to these, but they turned out quite dry. Maybe I should try using a little more liquid and see how they go. Look impressive though.

    Warm scrolls not straight from the oven scrolls! I melted my icing when I put it on straight away. I'm sure they will still be delicious though.
