Lemon Fudge

  • 180 g white chocolate
  • 160 g white sugar
  • 2 tbsp lemon zest, grated, (approximately 2 lemons)
  • 395 g condensed milk, (not skim)
  • 120 g Butter, (chopped)
  • 50 g golden syrup
  • 25 g lemon juice
  • 50 g glucose syrup
  • 1/8 tsp citric acid
  • 1/4 tsp ground turmeric, (optional or yellow food colouring)

Recipe's preparation

  1. 1. Break up chocolate and add to , chop 5 seconds, speed 9. Set aside, use a spatula to scrape sides. No need to rinse bowl.
    2. Add white sugar and lemon zest to , mill 20 seconds, speed 9.
    3. Add condensed milk, butter, golden syrup, lemon juice, glucose syrup, citric acid, and colouring if using (turmeric or food colouring). Cook for 8 minutes, 100 degrees, speed 3, MC removed.
    4. Scrape sides and bottom of bowl with spatula. Cook for a further 20 minutes, varoma, speed 3, MC removed.
    5. Add chocolate to , mix 10 seconds, speed 4, MC removed. Scrape sides and repeat if necessary.
    6. Pour into lined 15x25 cm slice tin. Refrigerate until set. Cut into small squares.
