Lemon Gooey Butter Cookies

  • 270 grams plain flour
  • 2 teaspoons baking powder
  • 250 grams Philadelphia cream cheese
  • 113 grams Butter
  • 300 grams sugar, To include in the cookie dough recipe
  • 120 grams sugar, To make icing sugar and roll cookies in
  • 12 grams lemon zest, (3 Medium Lemons)
  • --- Juice of 3 lemons
  • 1 teaspoon vanila bean paste
  • 1/8 teaspoon lemon oil, (Optional)
  • 1/8 teaspoon yellow food colouring
  • 1 teaspoon salt

Recipe's preparation

    Lemon Gooey Butter Cookies

    1. Line trays with baking paper and pre-heat oven to 180 degrees.

    2. Mill 120gms  sugar on speed 10 for 10 secs to make icing sugar and put to the side to use later.

    3. Mill 300gms sugar on speed 10 for 10 secs, then add lemon rind and mill again on speed 10 for 10 secs.

    4. Combine wet ingredients (Cream Cheese, Butter, Egg, Vanilla Bean paste and Lemon juice and mix on spead 4, 1 min.  Srape the bowl and repeat for another 30 secs

    5. On speed 4, add flour and baking powder gradually through hole in Thermomix lid and allow to combine, this may take 2 mins. Scrape and mix again on speed 4 for 20 secs.

    6. Remove wet cookie dough mix from Thermomix Bowl and place into fridge to become firm.  If dough remains on blades, use Turbo function to flick to the sides.

    7.  Once the dough has become firm (approx 30 mins), roll into balls and then roll in the icing sugar you made earlier and place on tray.  Allow for spreading of dough mix to occur.

    8.  Place in your pre-heated oven and bake for 13 mins.  If your oven is small, cook in batches at 13 mins per tray.  Cookie should be yellow with the icing sugar remaining on top.  If the edges are brown, your oven temp is too high and may require adjusting.

    9.  Allow to cool on baking tray.



- For GF, simple replace Plain Flour with GF flour and add guar gum not xanthum gum.

- All ovens are different, remember to adjust the temp as needed.

- While its not necessary, it does make it easier if Cream Cheese and Butter are at room temp.

- I used my homemade baking powder, saving me money

- I mill my own icing sugar, saving me money.

- This recipe is suitable for both TM31 and TM5.
