  • 1 packet of scotch finger biscuits
  • 100 gram Butter
  • 395 grams Condensed Milk (1 Tin)
  • 2 lemons
  • 3 Eggs - Seperated, (Save both whites and yolks.)
  • 1/2 cup caster sugar, (I have not weighed this as it is added while blades are spinning)
  • 1.5 cups dessicated coconut
  • A couple of pinches of Salt

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Directions
  1. Grease and line a slice tin (16 x 26 cms) slice tin with baking paper. Preheat oven to 180 degrees.

    Base

     

    Add butter (100 grams) to bowl. 1:30/90 degrees/slowest speed to melt

    Add broken up packet of scotch finger biscuits. 8 seconds/speed 7 to combine. 

    Scrape down sides of bowl and add coconut (30 grams). 5 seconds/speed 7. Press into the base of prepared pan and put in fridge to set (about 30 minutes). 

     

    Lemon Filling

    Add rind of two lemons to bowl - I like to slice the rind off with a sharp knife trying not to take too much white (pith) with it. 10 seconds/speed 10 to grate. Scrape down bowl.

    Add juice from both lemons (about 1/2 a cup) and condensed milk and three egg yolks (reserving whites for later) to grated lemon rind. 8 seconds/speed 7. 

    Pour onto base and place back into the fridge to become a little firmer. 

     

    Topping

    Clean and dry bowl thoroughly, insert butterfly and add egg whites (3) to bowl. Add a couple of pinches of salt. 5 minutes/37 degrees/speed four. At about the 3 minute mark (when whites are starting to stiffen add sugar (1/2 cup) 1 table spoon at a time through measuring cup hole while continuing to run. 

    Add coconut. 10 seconds/speed 4 to combine. It doesn't need to be mixed too much as you will mix it more while spreading it onto the filling. 

    Using a spatula gently spread meringue mixture onto filling. 

    Bake 20 - 25 minutes until the top is a lovely golden colour. Cool in pan before cutting. 

     

    You can add a little extra lemon juice if you like your lemon desserts to be more tart.

    Discovered this just recently. Absolutely a "winner" and quite easy. As other commented, make sure it is really cold before removing from tin and cutting. I refrigerated it overnight.

    Yummy. Must remember not to try to mov it until it is really cold, as the base was not set. Use Rice biscuits rather than scotch fingers for low wheat version.

    A huge hit with th extended family. I made a double batch of this for for a family dinner and everyone loved it, the small amount that was left over went to hubbys Work to share with the boys. I've had requests for it to be made again.

    I know the feeling...I always chuck something in the bowl and wished I had weighed it...I end up just staring into the bowl (like that's going to undo it) haha.  

    The verdict: delish! there are only two squares left after less than 24 hrs! (There's only two of us in the house!).

    Im just making this now FYI 1/2 cup of diy caster sugar was 100g and 1 1/2 cups of coconut was 120g.
