Cake

  • 250 grams Butter
  • 190 grams caster sugar
  • 3 eggs
  • 1 teaspoon vanilla essence / paste
  • 1 tablespoon Finely grated lemon rind
  • 250 grams sour cream
  • 310 grams plain flour
  • 1 level teaspoon baking powder
  • 1 level teaspoon Bi Carb Soda

Syrup

  • 220 grams sugar
  • 1 cup orange juice, freshly squeezed
  • 2 tablespoons lemon juice, freshly squeezed
  • 5 peaches, peeled and cut into wedges

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Cake
  1. Preheat oven to 160 C

  2. Lightly grease round ring pan.

  3. Add 250 grams butter to Thermomix bowl. 

  4. Add 190 grams caster sugar to Thermomix bowl. 

  5. Place cup in Thermomix lid. No counter-clockwise operation speed 6, 10 seconds.

  6. Add eggs to mixture, one at a time, mixing No counter-clockwise operation speed 6, 5 seconds after each egg is added with cup in lid.

  7. Scrape down sides of bowl. 

  8. Describe the preparation steps of your recipe

  9. Add to mixture flour, bi carb soda and baking powder. Place cup in lid. No counter-clockwise operation Speed 4, 10 seconds.

  10. Spoon batter into prepared pan.

  11. Bake in preheated oven 55-60 minutes or until cake is cooked when tested with a skewer.

  12. Stand cake in pan for 10 minutes then turn onto serving plate.

  13. Syrup
  14. Place sugar, lemon juice and orange juice in Thermomix bowl. Place cup in lid. No counter-clockwise operation 110 C, Gentle stir setting 7 minutes. 

  15. Add peaches to syrup mixture. Place cup in lid. Counter-clockwise operation 90 C, 5 minutes. 

  16. Arrange peaches on top of cake and slowly pour syrup over.

Vanilla essence can be replaced with home made vanilla paste
