Lemonade and Cream Scones

Ingredients

16 piece(s)

Scones

  • 320 grams Self Raising Flour
  • pinch of salt
  • 150 grams cream
  • 150 grams Lemonade

Recipe's preparation

    Scones
  1. 1. Preheat oven to 200 C

    2. Place flour and salt in the thermomix bowl and beat for for 3 sec on speed 8, until combined

    3. Add lemonade and cream through lid opening and mix for 5 sec on speed 5, until dough almost comes together

    4. Set dial to close lid position and mix for 10 sec on interval speed to form sticky dough

    5. Place on lightly floured surface and press to 3cm thick, cut with a 5cm round cutter

    6. Place scones on tray, making sure they touch and place in oven for 10-15min

  • One word...PERFECT! I did replace the lemonade...

    One word...PERFECT! I did replace the lemonade with soda stream water as we always have a sweet spread on scones so didn't need the scones to be sweet as well. The mixture was quite sticky but that's what makes the scones so light and fluffy. A floured surface, a little flour on top , floured hands and floured cutter made for very easy handling.

    I made these with GF SR flour as my son is coeliac. I did not change the quantities at all and they were perfect. Best GF scones we’ve ever made.
    I only had lemon flavoured lemonade so I used that. I could not taste the lemon at all.

    AMAZING!! I could never make scones previously (not 100% sure why) but these were simple and delicious!! Thank you. Next time I will brush some milk on top to make them a little browner.

    These are the best scones I've made so far! Lovely soft and light. I only had sugar free lemonade do I milled 25g sugar first and mixec it with the flour and salt. Delicious!

    I made 1 batch and my 12yo son ate almost all of them without me realising, he was considerate enough to leave 4 for the other 3 of us though, lol.  So I made him make a second batch by himself the day after, he isnt into cooking but enjoyed how easy these were to make.

    Amazing!!! I made these gluten free (Ald gluten free flour) I made a 1/4 batch as I didn't want to waste mixture should they have failed miserably. I used a mini muffin tin and got 9 from the small batch. They were awesome. Crunchy on the outside while light soft and fluffy on the inside. These will be made time and time again and in a full batch!!! Thanks for sharing tmrc_emoticons.)

    Nice recipe, not too sweet. Hardest part was getting the dough out of the Thermomix, it was wet and sticky, hard to work with. Maybe needs additional flour? The recipe made 14 x 5cm scones, I think mine were a bit thin will leave dough thicker next time.

    Very Nice n soooo simple - whipped them up before an impromptu visit to a friends. And all were impressed with the simplicity of the ingredients and ofcourse the end result. 

    Would try adding some sugar next time, to give it a sweeter taste, to cater for those who prefer to eat scones without the traditional topping of 'jam & whipped cream'
