Ingredients

Base

  • 2 eggs
  • 100 grams sugar
  • lemon rind from half a lemon
  • 150 grams plain flour
  • 185 grams Butter
  • Juice from half a lemon

Cheesecake top

  • 2 eggs
  • 250 grams cream cheese
  • 70 grams caster sugar
  • lemon rind from half a lemon
  • Juice from half a lemon

Recipe's preparation

    Base
  1. 1. preheat oven to 180 degrees and line a 20cm cake tin or slice tray
    2. Melt butter 60 deg, speed 1, 2 mins
    3. Add remaining base ingredients and mix speed 5, 10 seconds
    4. Scrape down sides and if needed mix another 5 seconds on speed 5
    5. Transfer mix into the base of cake tin and rinse bowl.
  2. Cheesecake top
  3. 1. Place all ingredients in bowl and mix 30 seconds, speed 5
    2. scrape down sides and if mixture is not smooth mix another 10 seconds on speed 5
    3. Pour over cake base and spread evenly.
    4. Bake 40-45 mins. When finished allow to cool before removing from
    cake tin.

Tip

You can change the flavour of the cake by switching out lemon for whatever you would like to change to eg: mango.
