Lime, coconut and macadamia cake with a lime glaze.

Cake dough
  • 2 Limes, Zest and juice
  • 165 grams Caster sugar
  • 1/4 tsp Salt
  • 230 grams Raw macadamias, Divided. 200g & 30g
  • 40 grams SR flour
  • 6 eggs, Separated, and whites beaten to stiff peaks
  • 1 dash Vanilla
  • 45 grams Dessicated coconut
Lime glaze
  • 250 grams Icing sugar
  • 20-30 grams Lime juice
  • 30 grams Reserved macadamia nuts, Lightly chopped

Recipe's preparation

  1. Preheat the oven to 180°C, and greade and line a deep loaf pan.

    1. Place lime zest, sugar and nuts into the Closed lid and blitz sp9/5-10 seconds.

    2. Scrape bowl and add flour, yolks, vanilla and coconut.

    3. Blend sp4/15 seconds Counter-clockwise operation

    4. Transfer to a good sized bowl.

    5. Beat in about 1/3 of the egg whites to loosen the mixture, then gently fold through the remainder.

    6. Spread into your prepared pan and bake for 35-40 minutes or until cooked when tested.

    7. Leave in the pan for 10 minutes before turning out onto a wire rack to cool.

  3. 1. Place icing sugar, 20 mls juice ( to start with, adding more if required) and blend at sp 4/15 seconds.

    2. Pour over the cake leaving a little in reserve.

    3. Sprinkle with the remaining nuts and then drizzle a little of the reserved icing over.
