Lime, coconut, macadamia and almond cake with a lime glaze.

Cake dough

  • 80 grams Raw macadamias, + extra for sprinkling (optional)
  • 120 g blanched almonds
  • 2 --- Limes, Zest for cake and juice for glaze
  • 40 grams SR flour
  • 1 level tsp baking powder
  • pinch salt
  • 165 grams caster sugar
  • 6 --- eggs, Separated, and whites beaten to stiff peaks
  • 1 dash vanilla
  • 45 grams dessicated coconut

Lime glaze

  • 250 grams icing sugar
  • 20-30 grams lime juice
  • 30 grams Reserved macadamia nuts, Lightly chopped (optional)

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Cake
  1. Preheat the oven to 180°C, and grease and line a loaf/ springform pan. (20cm)

    1. Place nuts, zest, flour, baking powder and salt and mill 30-40secs/sp9.
    Set aside.

    2. Insert butterfly and add the egg yolks, vanilla and sugar and beat 3mins/sp4.

    3. Return the nut mixture to the Closed lid, add the coconut and blend all together 10secs/sp4.
    Transfer to a large bowl.

    4. Gradually fold in the beaten egg whites, taking care not to deflate the mixture too much.

    5. Gently pour into the prepared pan and bake at 180°C for about 40 mins.

    6. Leave in the pan for 10 mins before cooling on a wire rack and drizzling with the glaze.

  3. 1. Place icing sugar, 20 mls juice ( to start with, adding more if required) and blend at sp 4/15 seconds.

    2. Pour over the cake leaving a little in reserve.

    3. Sprinkle with the remaining nuts and then drizzle a little of the reserved icing over.

Tip

One of my all time favorite cakes.

A delightful texture and combination of flavours.
Feel free to substitute for all macadamias. I choose a mixture since macadamias are pretty expensive and it doing a blend seems to make no difference to the flavour 👍

    This cake was lovely and soft, however I added the juice of a whole lime to cake batter, for flavour and to loosen the stiff batter. Worked a treat.
