Low sugar banana cake

  • 125 g unsalted butter
  • 2 very ripe bananas
  • 80 g Rice malt syrup
  • 1/4 --- dessicated coconut, cup
  • 1 level tsp vanilla essence

Recipe's preparation

  1. 1. Preheat oven to 170 degrees (fan forced).
  2. 2. Grease and line 20 cm spring-form pan.
  3. 3. Add butter and banana to mixing bowl and mix for 7 seconds, speed 8.
  4. 4. Add remaining ingredients and mix for 20 seconds, speed 4.
  5. 5. Pour into pan and bake for 40-45 minutes or until skewer comes out clean.

Tip

Feel free to substitute rice malt syrup for sugar.
