Recipe's preparation

    Method
  1. Prepare a 12 cup muffin tin with patty cake cases (muffin size) and preheat the oven to 180 degrees C.

Add all ingredients to the bowl.

    Mix 1 min/Sp 5.

Pour muffin batter into the cases, then sprinkle with cinnamon and raw sugar.

Bake in the oven for 20 mins or until golden brown.

Variation:  Add a handful of choc chips after mixing for a sweeter treat. Mix 10 sec/Counter-clockwise operation"Counter-clockwise operation" /Sp 3.

  2. Notes
  3. These muffins freeze really well. Once they are cooled, pop them in a container for the freezer. Simply add a frozen muffin to the lunchbox each morning - it'll be thawed by morning tea!

Tip

Can also be made into a Banana Cake. Bake in a 23x12cm loaf tin.
