Macadamia & Ginger Cookies

  • 125 g Butter, (room temperature)
  • 120 g brown sugar
  • 1 egg
  • 1 tsp vanilla essence
  • 150 g plain flour
  • 150 g Self Raising Flour
  • 110 g crystalised ginger, (roughly chopped)
  • 110 g macadamia nuts, (roughly chopped)

Recipe's preparation

  1. Preheat oven to 175 degrees celcius and line 2-3 baking trays with baking paper. Set aside.
    Place butter and sugar into bowl and mix 1min/speed3 until thick and creamy.
    With blades going on speed 3 add egg and Vanilla and mix until combined.
    Add flours and mix 20 secs/speed 3 until the dough comes together and thenDough mode20 secs.
    Add ginger peices and macadamia nuts and stir through by hand.
    Tip dough out on to your thermo mat and form into a ball.
    Place heaped dessert spoonfuls of mixture onto trays, allowing room for spreading and push down lightly.
    Cook for 15 mins or until pale golden.



    Cool on tray for 5 mins before transferring onto wire rack to cool more
