Ingredients

Bottom Layer

  • 110 g Butter, (1/2 cup)
  • 50 g sugar, (1/4 cup)
  • 30 g cocoa powder, (5 tbsp)
  • 5 g vanilla extract, (1 tsp)
  • 1 egg
  • 100 g dessicated coconut, (1 cup)
  • 175 g graham cracker crumbs, (1 and 3/4 cups) - could use marie biscuits or some other standard biscuit crumb
  • 50 g pecans (chopped), (1/2 cup) - could also use walnuts

Middle Filling Layer

  • 65 g Butter, (1/4 cup)
  • 30 g Milk, (3 tbsp)
  • 300 g icing sugar, (2 cups)
  • 15 g custard powder, (2 tbsp)

Topping

  • 200 g chocolate chip
  • 15 g coconut oil, (1.5 tbsp)

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

    Bottom Layer
  1. 1. Combine butter, sugar, cocao, egg and vanilla in the bowl. Cook for 7 min/90C/sp3.
    2. Add graham cracker crumbs, coconut and chopped nuts. Mix for 1 min/sp3 rev Counter-clockwise operation
    3. Scoop mixture into 9in greased pan and press evenly. Set aside to cool.
  2. Middle Filling
  3. 1. Wash bowl.
    2. Add butter, milk, powdered sugar and custard powder in bowl. Mix 1min/sp3.
    2. Spread evenly over cooled bottom layer.
  4. Top Layer
  5. 1. Wash bowl.
    2. Combine chocolate chips and coconut oil and cook for 3 min/60C/sp2.
    3. When it is cool but still liquid, pour and spread over the middle layer.
    3. Chill Nanaimo bars in the fridge.
