Old fashioned Butterscotch Cake

  • 1 teasp vanilla
  • 200 g brown sugar
  • 2 eggs, separated
  • 1 tbsp Golden Syrup
  • 180 gself raising flour
  • 100 g plain flour
  • ½ teasp cinnamon
  • 130 g Milk
  • CARAMEL ICING
  • 60 g Butter
  • 100 g brown sugar
  • 150 g icing sugar
  • 65 g Milk

Recipe's preparation

  1. In a clean dry bowl, add butterfly and whisk egg whites for 3 minutes on 50° at speed 3 until soft peaks form. Set aside.

     

    Cut butter from fridge into small pieces. Chop for 30-45 secs, 50° on speed 4-5 until soft but not melted. Insert butterfly, add vanilla, brown sugar and cream on speed 4 until and creamy. Scrape down sides. Add Golden syrup and mix speed 4 adding egg yolks one at a time though the hole in lid.  

     

    Remove butterfly, scrape down sides then add flour, cinnamon and milk and mix for 10-15 secs on speed 5 to incorporate. Add eggwhites and mix through gently (speed2-3) until just incorporated.

     

    Place into a prepared 23cm cake tin. Bake 50-60 minutes at 180°.  Cool on wire rack and then ice.

     

    Caramel Icing: melt butter and sugar - 3 mins 80 degrees speed 3. Add milk though lid while stirring at speed 2. Then heat for 5 minutes, 90°and speed 3. Allow to cool to 37°. Add icing sugar, mix 20 secs speed 4. Spread over cake.

    Awesome cake! Made it 10pm at night for my hubby's birthday. Very easy & yummy!  I poked the cake after taking it out of the oven and put a caramel sauce over it.
