Ooba Carrot Cake
- 550 g carrot
- 150 g apple, any variety
- 3 eggs
- 200 g sugar
- 2 tsp vanilla extract
- 100 g oil, flavourless
- 50 g coconut oil
- 1 tsp mixed spice
- .5 tsp cinnamon
- 1 tsp bicarbonate of soda
- 300 g wholemeal self-raising flour
- 100 g sultanas, optional

Recipe is created for

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation
- Preheat oven to 170°C
Grease and line large rectangle baking pan - Cut Carrot into 2 cm chunks
Cut the apple into 4 chunks
Place in "Closed lid" and chop 8 sec/speed 5
Set aside in a seperate bowl - Without washing TM bowl
Add Eggs, Sugar, Vanilla and both oils to "Closed lid"
Blend 5 sec/speed 5 - Add Spices, bicarb and flour
Mix 10 sec/speed 5
Scrape bowl and repeat if necessary - Add back the carrots and apples
I use the spatula and mix them through just to help it get started.
Mix 10 sec/speed 4
Scrape bowl and repeat if necessary - Add the sultanas if you are using them and mix 10 sec/REVERSE"Counter-clockwise operation" /speed 4
- Bake for 30 mins or until skewer comes out clean
