Ooba Carrot Cake

  • 550 g carrot
  • 150 g apple, any variety
  • 3 eggs
  • 200 g sugar
  • 2 tsp vanilla extract
  • 100 g oil, flavourless
  • 50 g coconut oil
  • 1 tsp mixed spice
  • .5 tsp cinnamon
  • 1 tsp bicarbonate of soda
  • 300 g wholemeal self-raising flour
  • 100 g sultanas, optional

      Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

  1. Preheat oven to 170°C
    Grease and line large rectangle baking pan
  2. Cut Carrot into 2 cm chunks
    Cut the apple into 4 chunks
    Place in Closed lid and chop 8 sec/speed 5
    Set aside in a seperate bowl
  3. Without washing TM bowl
    Add Eggs, Sugar, Vanilla and both oils to Closed lid
    Blend 5 sec/speed 5
  4. Add Spices, bicarb and flour
    Mix 10 sec/speed 5
    Scrape bowl and repeat if necessary
  5. Add back the carrots and apples
    I use the spatula and mix them through just to help it get started.
    Mix 10 sec/speed 4
    Scrape bowl and repeat if necessary
  6. Add the sultanas if you are using them and mix 10 sec/REVERSECounter-clockwise operation/speed 4
  7. Bake for 30 mins or until skewer comes out clean
