Orange and White Chocolate muffins

  • 250 grams all purpose flour
  • 2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • Zest of 1 orange
  • 150 grams white sugar
  • 50 grams brown sugar
  • 180 grams buttermilk
  • 2 eggs
  • 113 grams butter, melted
  • 250 grams White Chocolate Chips

Recipe's preparation

  1. Preheat oven to 180°C. Line muffin tin.
  2. Add bowl ontop of thermomix bowl and weigh Flour into it. Add baking soda, baking powder and salt and mix, set aside
  3. Add orange zest to bowl and blits 10 seconds on speed 9.
  4. Add sugar and mix 20 seconds on speed 5. It will have a wet look.
  5. Add brown sugar, eggs, buttermilk and melted butter, mix for 20 seconds on speed 4.
  6. Add dry ingredients and mix 10 seconds on speed 5, scrape down sides and mix another 10 seconds on speed 5.
  7. Add chocolate chips and mix with spatula.
    Divide into muffin tray and add some chocolate chips if desired
  8. Bake 20 minutes and enjoy
