Orange drizzle cake: batter

  • 120 g oil, E.g Rice bran, canola
  • 2 eggs
  • 1/4cup orange juice
  • 260 g thick yogurt, E.g Greek, natural flavour
  • 1 tsp orange essence, Optional
  • 330 g caster sugar
  • 300 g self-raising flour
  • 1 tsp baking powder

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

    How to:
  1. Batter:

    1. Preheat the oven to 160°C
    2. Add the oil, eggs, rind, juice, yogurt and sugar to the Closed lid and blend 30secs/sp3.5
    3. Add the flour and baking powder 10secs/sp3. Scrape and repeat.
    4. Pour into a greased/lined loaf tin and cook for 50-60mins, or until cooked when tested.
    5. Remove from the oven but leave in the pan.

    Make the glaze:
    1. Combine the ingredients and gently spoon over the still hot cake. The juice will soak into the cake, and the sugar will sit on the top.

Tip

Make the most of seasonal produce! Blood oranges are in season now, so if you can get them, they look fantastic! Most importantly: don't make the glaze until the cake is hot from the oven. You don't want the sugar to dissolve!

    Nice texture and flavour. Have plenty of citrus atm, also made one with lemon.
    Makes a lot of mixture, so divided mixture into ring and small loaf tin with success.
    I iced with lemon/orange icing. Nice result, will make again. Thank you..
