Orange Lightning Cake (adapted from Annabel Langbein's Recipe

Ingredients

Orange Lightning Cake

  • 1 --- orange, unpeeled, quartered and seeds removed
  • 125 grams Butter, at room temperature and cut into cubes
  • 1 teaspoon baking soda, dissolved in 1/2 cup warm water
  • 2 eggs
  • 200 grams raw sugar
  • 1 teaspoon vanilla extract
  • 310 grams High Grade Flour
  • 130 grams sultanas

Recipe's preparation

    Preheat oven to 160ºC fan bake
  1. Place butter and orange into bowl and mix 7sec/sp8.

    Scrape Bowl.

    Add remaining ingredients (except sultanas) and combine 20sec/Rev/sp4.

    Scrape Bowl.

    Add sultanas and stir 10sec/Rev/sp4

    Pour into 20cm cake tin (greased & lined) and bake until skewer inserted into the centre comes out clean (approx 1 hour).

    Orange Lightning Cake will keep in an airtight container for up to a week or can be frozen.

Tip

I sometimes use a skewer to pierce all over the cake and pour over freshly squeezed orange juice while the cake is still hot.

This makes it moister and tastier.

Can be iced if chosen.
