Ingredients

Orange sponge cake

  • 3 egg yolks
  • 2 eggs
  • 170 grams caster sugar
  • grated zest of an orange
  • 1 tablespoon orange juice
  • dash vanilla
  • 200 grams plain flour
  • 1.5 tsp baking powder
  • 1/2 tsp salt
  • 60 grams Boiling water, slightly more than 1/4 cup.

Icing (optional)

  • 1 cup icing sugar, sifted
  • 1 tablespoon orange juice
  • sprinkle of shredded coconut

Recipe's preparation

    Cake
  1. Preheat oven to 170C.

    Grease and line a 23cm round or springform pan.

    1. Add egg yolks and eggs to the Closed lid.

    2. Insert the butterfly whisk, MC and beat for 5 minutes/speed 4, or until thick and creamy...minimum of 5 mins.

    3. Add the sugar gradually through the removed MC, (but with the butterfly still in place) over a period of 10 minutes.

    4. Add zest, juice and vanilla and blend for 1 minute/speed 4.

    5. Transfer the entire contents a suitable bowl and gently fold in the flour, baking powder and salt.

    6. Add the boiling water to the bowl and fold through gently.

    7. Bake for 40 minutes or until cooked when tested.

    8. Drizzle with icing or just dust with icing sugar.

  3. 1. Combine in a small bowl and drizzle over prepared cake.
