Oreo Choc Chip Muffins
- 133 g oreo biscuit, original, sweet vanilla creme
- 60 g chocolate chip, small
- 300 g self-raising flour
- 150 g plain flour
- 0.5 level tsp bicarbonate of soda
- 200 g brown sugar
- 2 eggs
- 370 g Milk
- 180 g vegetable oil
- 60 g oreo biscuit, mini, for decoration only

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

Recipe's preparation
- Preheat oven to 180 degrees. Line 16 holes of 2x12 hole muffin trays with cupcake/muffin liners and set aside.
- Place oreo biscuits into mixing bowl, place lid and MC and chop 1-2sec/turbo until biscuits are broken into small chunks. Repeat if required. Transfer to a bowl and set aside.
- Place flours, bicarbonate of soda and sugar into mixing bowl, place lid and MC and mix 5sec/speed 5.
- Add eggs, milk and oil and mix 5-10sec/speed 4 - ensure not to over-mix.
- Add the oreo biscuits and chocolate chips to the batter and gently mix with the spatula in the mixing bowl, ensuring not to over-mix.
- Divide the mixture between the prepared muffin trays. Bake for 20-30min (180 degrees) or until a skewer inserted into the centre of the muffins comes out clean. Transfer onto a wire rack to cool completely.
- Place a small amount of royal icing onto the top of each muffin, in the middle only, to secure the mini oreo on the top for decoration.

Tip
Option to replace the flour with wholemeal flour or a combination of flours (e.g. self-raising and wholemeal). Gluten free flour can also be used.
