PALEO BANANA & DATE BREAD

  • 4 bananas
  • 125 gram walnuts
  • 10 gram chia seeds
  • 4 eggs
  • 125 gram ALOND OR NUT BUTTER
  • 40 gram coconut oil
  • 125 gram Coconut Flour, OR LSA OR ALMOND MEAL
  • 1 tablespoon cinnamon
  • 1 tablespoon Nutmeg
  • 1 teaspoon baking soda
  • 1 teaspoon Vanilla Paste

Recipe's preparation

    PALEO BANANA & DATE BREAD
  1. Pre Heat Oven 170 degrees

    Blend 3 bananas, eggs, nut butter & coconut oil on speed 8-9 till smooth

    Add last banana walnuts and dates, blend on speed 3 til required consistancy

    Add flour/nut meal, baking soda, cinnamon, nutmeg, salt & vanilla, mix on reverse on speed 2-4 until blended

    Line a loaf tin with baking paper & pour mixture into tin

    Add some extra nuts on top for decoration

    Place in oven & bake for 30 mins - 45 mins

    A great recipe. Noticing that you left out the date quantity & not reading the previous comments I added around 3/4 cup. Also used 80 grams of almond meal & 45 grams of coconut flour As well I substituted the almondbutter with 80 grams of grass fed butter

    I am new to Thermomix (only got it a week ago) and tried this recipe out as my brother in around and follows a Paleo diet. Just wanted to check a few things with you as whilst in the end we got there it did not turn out as expected. Am just wondering whilst it says 4 bananas is there an overall recommended weight for the bananas. The reason I ask is that we cooked out bread for over 45mins and it was still raw in the middle. In the end I think we ended up having to cook it for a lot longer and was thinking possibly our bananas were to big. Thanks for the recipe though. Is great!
