Peanut Butter & Banana Protein Bread

  • 265 grams Peanut Butter
  • 3 eggs
  • 3 bananas, The riper the better
  • 1.5 teaspoons baking powder
  • sesame seeds, Optional
  • 1 teaspoon vanilla essence

Recipe's preparation

  1. Preheat oven to 160 degrees, grease and line a loaf tin. Put sesame seeds into the loaf tin and move it so they coat the sides and bottom of the tin.

    Add all ingredients (except sesame seeds) to Thermomix bowl, mix on speed 5 for 12 seconds.

    Pour into prepared tin and bake for 45 minutes or until a skewer comes out clean. Allow to cool.

Tip

This was a total experiment with a jar of peanut butter and some bananas that needed using up. I ended up modifying a great banana bread recipe. By some miracle it worked beautifully. Although, I left it in the oven a bit long, as you can see in the picture. I've modified the temperature and cooking time for the recipe. 

I think it would be great with chocolate buds added but I'm being far too piously healthy to try it at the moment.

(Any tips on rotating the picture would be most welcome!)

    I made this today. I was surprised, it's actually not too bad. I added 100g of 70%chocolate which compliments the banana and peanut butter flavour. I wold make it again, an alternative if your avoiding flour.
