Peanut Butter Cup Cupcakes

Ingredients

Filling

  • 250 g Peanut Butter, Smooth
  • 125 g icing sugar
  • 25 g Brow Sugar
  • 30 g Butter, Softened
  • 1 tsp Vanilla ess
  • 1/2 tsp salt

Cup Cake

  • 1 Chocolate Cupcake batter

Frosting

  • 1 Favourite Frosting or Ganache

Chocolate Patty Pan

  • 250 g dark chocolate, or 1 Block

Recipe's preparation

    Chocolate Patty Pan
  1. These are pretty easy, just fiddly.

     

    I havent included a recipe for cupcakes as everyone has their own favorite.                   

     

    Melt the chocolate 5 mins 60 deg, speed 4, (scrap down if needed) and pour into silicone cupcake models and drag up the sides with a teaspoon (you want a thick layer). Leave to set.

     

    Mix up a batch of your favorite cupcake batter as you normally would. (I do not clean my bowl after melting chocolate)

  2. Peanut Butter Filling
  3. While cakes are cooking make peanut butter filling by placing all ingredients into mixing bowl and mix 20 seconds, speed 5. Scrap sides and wizz again if needed.


     

  4. Assemble
  5. Allow cakes to cool completely. Once cooled cut in half and spread peanut butter mix on and put top half back on.

    The mix is quite tacky, so I find it easier to roll it into a ball and just fatten it on. Or you could cut little holes out of the top and fill with filling put the little bit you cut out back in.


    Once all cupcakes have been filled Frost with Butter Icing or ganache and place into chocolate patty pans.

Tip

I find it best to put a dab of frosting/ganache into the chocolate patty pan before putting the cupcake in just to act as a "glue"

 

The chocolate patty pan can be ignored completly, it is just a bit different.

 

If you do not have a favorite chocolate cupcake recipe, a packet cake is just as good and easy tmrc_emoticons.-)
