- 400 gram Tin of Pears
- 125 gram sugar
- 50 gram oil
- 25 gram Coconut, Dedicated or shredded
- 1 piece egg
- 350 gram Self Raising Flour
- 1 tsp baking powder
- 2 tsp cinnamon

Preheat oven to 180C
Drain pears and place fruit in jug. Chop 1sec Turbo
Add all other ingredients, mix 20 seconds, speed 3,
Scrape down sides, mix for a further 5-10 seconds (until it appears mixed)
Divide evenly between 12 patty pans or greased muffin tin
sprinkle with additional sugar and coconut if desired
Bake in oven for 15 to 20 minutes until golden and springy to touch
Place on a wire rack to cool (remove from muffin tin if being used)
Additional ingredients like nuts, sultanas or chocolate chips can be added.
Other tinned fruit can be substituted, such as apricot or peach.
A Ripe banana can also be substituted.
