Pear & Raspberry Bread (inspired & translated from Fast Ed's recipe on Better Homes & Gardens)

Ingredients

  • 260 grams Self Raising Flour
  • 125 grams caster sugar
  • 1 tsp Bi-carbonate of Soda
  • 2 eggs
  • 260 grams natural yoghurt
  • 1 tsp vanilla extract
  • 25 grams olive oil, You can substitute other oils
  • 400g can tinned pears, Drained & Roughly Chopped
  • 180 grams frozen raspberries

Recipe's preparation

  1. Pre-Heat oven on 180 degrees & line a loaf tin with baking paper/grease.

  2. Put flour, sugar & soda into bowl. Mix for 10 seconds on speed 4.


     

  3. Add eggs, yoghurt, extract & oil. Mix for 30 seconds on speed 4

  4. Mix for a further 15 seconds on speed 6


     

  5. Add chopped pears & raspberries. Mix on Speed one for 10 seconds to combine but do not over mix as will mash the berries.

  6. Pour into prepared tin & bake for 50-60 minutes until a skewer comes out clean.

    Used half the sugar and coconut oil, delicious!!! Put some white chocolate buttons on top for the kids!!
