Pear/Apple & Cinnamon Muffins

Ingredients

12 portion(s)

Raw Sugar

  • 50 g raw sugar
  • 2-3 large pear or large apple, peeled, cored & quartered
  • 180 g plain flour
  • 180 g Self Raising Flour
  • 200 g vegetable oil
  • 2 egg
  • 1 teaspoon cinnamon
  • cinnamon sugar

Recipe's preparation

    Muffins
  1. Preheat oven to 180'C

    Place sugar in the TM bowl and mill 3 secs | speed 9
  2. Add the pear or apple and chop 1-2 secs | speed 5
  3. Add the flours, cinnamon, vegetable oil and eggs. Mix 5 secs | Counter-clockwise operation | speed 4
  4. Spoon into muffin patty pans or muffin papers and sprinkle with Cinnamon Sugar*
  5. Bake at 180'C for 18-20 minutes or until lightly golden
  6. *Cinnamon Sugar: Add 110g Raw Sugar and 2 Cinnamon quills and mill 20 secs | speed 9 Store cinnamon sugar in an air tight container for future use on muffins, scrolls etc

    I made these today with 2 of my Daycare kiddies. I found there to be not enough of an Apple taste. I think next time we will add a bit of cinnamon to the mix and also an extra apple as they were quite plan. Other than that great simple recipe thank you. tmrc_emoticons.)

    Love these, have made them a couple of times now. Could use a second apple if you want it more fruity... And I would def stick to vegetable oil as its lighter and tastless in comparison to EVOO. Yummo!

    These were delicious. I doubled the receipe but kept sugar at 75g. They rose nicely and were nice and fluffy. Will make again for sure. Good lunchbox addition.

    I really enjoyed these, took a whole 10 seconds to whip them up and get them in the oven! Makes 12 smallish muffins, might double the recipe next time, yummy  tmrc_emoticons.)
