  • 110 grams extra light olive oil
  • 2 eggs
  • 45 grams Maple syrup, (check 1/4 cup weight)
  • 80 grams buttermilk
  • 110 grams caster sugar
  • 2 bananas
  • 210 grams plain flour
  • 1 teaspoon baking powder
  • 100 grams pecans

Recipe's preparation

    Bread
  1. Preheat oven to 180 degrees celcius.  Grease and ine a 6cm deep, 21x10cm loaf ban.

  2.  

    Place oil, eggs, maple syrup, buttermilk, sugar, bananas, and pecans into bowl.  Whisk 15seconds/speed 4.  Scrape sides down.

  3.  

    Insert butterfly.  Add flour and baking powder to bowl.  Stir 20seconds/Counter-clockwise operation/speed 1.  Scrape down sides 10 seconds/Counter-clockwise operation/speed1.

  4.  

    Pour mixture into loaf pan.  Bake for 50-60 minutes until a skewer insered into centre comes out clean.  Allow to cool completely in pan.

  5. Serving
  6. To serve, preheat grill on medium.  Slice bread. Toast under grill.  Spread with rictota and drizzle with syrup.
