      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. Recipe's preparation

  1. Preheat oven to 160 fan forced, line 2 x baking trays
  2. Add sugar, 2 eggs, 2 teaspoons vanilla extract, 7 sec/Speed 3
  3. Add plain flour,
  4. Add self raising flour 6 sec/speed 5
  5. Add pistachios, Knead 30 seconds
  6. Turn onto lightly floured mat, divide dough into 2 x 20cm logs.
  7. Bake 30 minutes until golden
  8. Cool on tray 10 minutes, reduce oven temperature to 130 fan forced
  9. Use serrated knife to cut 5mm slices (small sawing movement to avoid crumbling).
  10. Arrange on trays in single layers and bake for 30 minutes until dry and crisp, turning over halfway.
  11. Cool fully on wire racks.
    Can be stored for up to a month in a sealed dry container.
