Pumpkin Fruit Cake - Low Fat

Ingredients

Pumkin Fruit Cake

  • 150 g raw sugar
  • 250 g apricot nectar
  • 2 eggs
  • 300 g pumpkin cooked
  • 375 g Mixed fruit
  • 250 g Self Raising Flour

Recipe's preparation

  1. Pre-heat oven to 180c.

    Place raw sugar into TM bowl and mill for 10 seconds on speed 10.

    Add apricot nectar, eggs and cold pumpkin.  Mix for 10 seconds on speed 5.

    Add mixed fruit and mix for 5 seconds on Counter-clockwise operation + speed soft.

    Add flour and mix for 30-40 seconds on Counter-clockwise operation + speed 3.

    Pour mixture into a greased and floured fruit cake tin.

    Bake approximately 60 mins or until the skewer comes out clean.

    Allow to cool slightly in the tin before turning out onto the wire rack.

    Thank you for a wonderful tasty recipe. Great way to use up leftover apricot nectar (which is how i found the recipe). Freezes well too. Will definately make again. Smile

    Fabulous recipe

    This is a lovely low fat fruit cake.

    I used xylitol 150g instead of sugar and used chia gel (2 tablespoons of black or white chia soaked for 10 mins in 6 tablespoons of water) instead of eggs. Also a teaspoon of mixed spice.

    Cooked at 170 degrees for 40 mins.

    Hi Mazza.  Thank you for an easy fruit cake recipe.  I couldn't wait to try it so used sweet potato instead.  Turned out great (steamed in Varoma with skin on!!). No butter - even better.  Will certainly be making this recipe again and again.
