Pumpkin Pie Spice Biscotti
- 3 eggs
- 150 g white sugar
- 2 teaspoons vanilla extract
- 270 g plain flour
- 1 teaspoon bicarbonate of soda
- 1/8 teaspoons salt

- 40 g walnuts, chopped
- 75 g Cranberries

Recipe's preparation
- Insert butterfly whisk. Mix eggs, sugar, vanilla extract for 1 min speed 4
- Remove butterfly whisk. Add flour, bicarb, salt, pumpkin pie spice, walnuts, cranberries, and ginger. Mix on 15 sec speed 4
- Knead for 20 sec
- Turn dough onto floured surface and roll into a ball. Slice in half.
Roll each half into ball then into log 15cm by 10cm. Flatten / smooth down into a round rectangle. - Bake at 175C for 40 - 45 minutes.
Allow to cool, then slice into 2cm slices (on diagonal) and place onto baking paper. - Bake at 175C for 12 to 15 minutes flipping over half way for even browning.

Tip
For crisper cookies, bake for up to 20 minutes... 10 minutes per side.
