- 75 grams Butter
- 1 banana, Chopped
- 180 grams SR flour
- 100 grams sugar
- 1/4 teaspoon Carb Soda
- 1/2 teaspoon cinnamon
- 1/2 teaspoon Nutmeg
- 65 grams Milk
- 1 egg
- 1 pinch salt
LEMON ICING
- icing sugar, About 1 & 1/2 Cups
- lemon juice, As much as needed to mix icing
- 1 teaspoon Butter, Softened

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
- Preheat Oven to 160 Degrees fan forced.
Grease and line a slice tin 18 X 26cm
1. Weigh butter into bowl and melt 2 minutes, 80 degrees, Speed 1 or until butter is melted... It might need another minute when the weather is cold or butter is just out of the fridge.
2. Add all other ingredients amd mix 10 seconds on speed 3, scrape down sides of bowl and mix for a further 5 seconds.
3. Spread into slice tin and bake for 25 - 30 minutes or until cooked. - 1. Mix icing and butter in a bowl, you could do this in the TM but I find it just as easy to mix in a bowl and scrape straight onto the slice.
It is easier to control the consistency of the icing while adding the lemon juice bit by bit in a bowl.
2. Add enough lemon juice to make spreadable, slightly runny, but will spread and set in the fridge.
3. Sprinkle with cinnamon and place into fridge to set icing.
When set cut into 18 pieces and serve for morning or afternoon tea.

Tip
This is a great way to use up that one banana that has gone a bit brown and soft in the fruit bowl. It is such a tasty recipe but so quick to make in the TM....It is also ok for the TM31
You could lessen the amount of sugar if you like!!
I have been making this for my kids for years and now my Grandkids, they all love it. It is also a great slice to serve for guests for afternoon tea.

Trying to be a bit healthy but couldnt resist this - so have made it using coconut oil instead of butter, spelt flour instead of white (added baking powder), and rice malt syrup instead of sugar. It came together really well! Going to top it with quirky cooking’s coconut cream icing (coconut cream, honey, lemon, vanilla) great versatile recipe Thankyou!!!! We iced it a bit too soon without waiting for the cake to cool and all the icing ran to the edge as the surface was a bit sloped so next time will wait longer before icing.
