Ingredients

Quinoa, Oat & Coconut Cookies

  • 125 g Butter, Unsalted
  • 40 g Rapadura Sugar, or Sweetner
  • 30 g Maple syrup
  • 95 g Quinoa flakes
  • 90 g rolled oats
  • 60 g coconut flakes
  • 1 --- egg
  • 50 g Cacao Nibs or Choc Bits, (Optional)

Recipe's preparation

  1. 1. Preheat the oven to 170°C (338°F) and line a baking tray with greaseproof paper.

    2. Place butter in TM bowl and melt 2min / 60d / s3

    3. Add Rapadura or Sweetner and Maple Syrup.  Mix 30s / 50d / s3

    4. Scrape down sides of bowl and mix again 20s / s3

    5. Add all the dry ingredients and egg.  Mix 30s / reverse / s4

    6. Scrape sides of bowl.  Add Cacao Nibs or Choc Bits and mix again 10s / reverse / s4.

    7. Place tablespoons of the cookie dough onto the prepared baking tray.

    8. Place the baking tray in the oven and bake for 10 to 15 minutes or until golden.

    9. Allow to cool slightly before removing from the baking tray. You'll find the cookies harden further on cooling.

    These were great!  Kids loved them! I used Rice Malt Syrup instead of the Maple & they were delish.  Will definately make them again!

    Easy, wheat free bikkie. Similar to Anzacs so kids were happy.  I used coconut sugar as the sweetener and didn't worry about the Choc bits.

    These were delicious, I added more maple syrup and less sugar and instead of the cacao nibs I added 3 teaspoons of chia seeds.

    Great recipe.  These were quick and simple to make and taste great.  I had no chocolate, so just made them plain, but they still taste fine.  Healthy too.  Thanks.
