Raisin, Cinnamon and Oat Cookies

Ingredients

Bikkie Dough

  • 85 g brown sugar
  • 50 g castor sugar
  • 125 g Butter
  • 1 tsp vanilla extract
  • 1 egg
  • 1 tsp cinnamon
  • 100 g raisins, (or Cranberries or Apricots or Dried Apple or any other currants etc)
  • 80 g oats
  • 150 g plain flour

Recipe's preparation

    Preheat over to 160 Degrees.
  1. Place Brown Sugar, Castor Sugar, Vanilla and Butter into bowl.

    Closed lid Speed 6 for about 30 seconds. Check, Scrape down sides and cream another 5 seconds or so if needed.

  2. Add Egg and Stir Speed 4 for 3 seconds.

    Add the rest of the ingredients Closed lidDough mode for 15 seconds until a soft dough forms.

    Drop dessertspoons full onto a lined baking tray and bake for about 16 minutes 160 or until done.

Tip

I use a mix of whatever dried fruit I have, raisins are nice and chewy, but this would work well with diced dried apple, sultanas or currants as well.
