- 6 egg whites
- 185 grams Butter, melted
- 120 grams almonds
- 240 grams icing sugar
- 75 grams plain flour
- 100 grams white chocolate, Coarsely chopped
- 100 grams raspberries
- 1 tsp icing sugar, Decoration
Preheat oven to 180 deg. Grease friand pan.
Place Almonds in and mill for 10 seconds speed 4, and set aside.
Place butter in and melt 1 minute speed 2, and set aside.
Place egg whites in and blend for 10 seconds speed 2, or until combined. Add butter, ground almonds, icing sugar, flour and chocolate, blend 20 seconds speed 2, or until just combined.
Divide mixture between pans.
Bake Friands for 10 minutes, remove from oven and top with Raspberries and bake for a further 15 minutes.
Allow friands to cool and dust with extra sifted icing sugar.
If using frozen berries, don't thaw them as this will minimise the colour to run into the friands.
