Recipe's preparation
- Beat 60 g soften butter and 1/4 cup sugar to a cream. 1 minute, speed 4
- Add the egg and beat well. 20 seconds, speed 4.
- Add 1 tsp Vanilla
- Add 1 1/4 cups flour to mixture gradually. work into a stiff paste. 40 seconds, speed 4. Scrape sides and repeat if need.
- Press out into a greased/ lined tin, approx 28 x 18 cm
- Rince and clean bowl
- Spread 1/2 cup raspberry jam evenly over base
- Beat egg. 5 seconds, speed 4
- Add 1 cup coconut and 3/4 cup of sugar. Mix well, 20 seconds, speed 4
- Spread coconut mixture evenly over the surface
- Bake in moderate oven (180 fan forced) for 15 minutes or untill golden brown
- Cool slightly before cutting into squares
