Base

  • 100 grams almonds
  • 150 grams hazelnuts
  • 70 grams dates
  • 3 tablespoons honey
  • 4 tablespoons cacao powder
  • 1 teaspoon vanilla
  • 1 pinch salt

Filling

  • 150 grams Cashews
  • 70 grams macadamia nuts
  • 6 tablespoons honey
  • 4 tablespoons cacao powder
  • 120 grams Almond milk
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla
  • 60 grams coconut oil

Recipe's preparation

    Directions
  1. 1.  Soak the cashews and macadamias for the filling for 4 hours or more then rinse well

    2.  Grease a 20cm spring form cake tin, then line with baking paper

    3.  For the base, process the almonds and hazelnuts for 10 secs, speed 6

    4.  Add the dates, honey, cacao powder, vanilla and salt.  Process 12 secs, speed 6

    5.  Press the mixture evenly into the prepared tin then refrigerate for at least 1 hour

    6.  For the filling, put the cashews, macadamias, honey, cacao, almond milk, salt, vanilla and coconut oil into the Thermomix

    7.  Blend 20 secs, speed 8

    8.  Pour the filling into the tin to cover the base evenly, then place in the freezer for at least 2 hours

    9.  Remove from tin while frozen and leave it out to soften a little before serving
