- 1 bunch rhubarb, washed and cut into long lengths
- Peel l orange, and juice
- 500 grams water
- 50 grams sugar
- 1 teaspoon cinnamon
- 150 grams Nutalex
- 150 grams sugar
- 1 egg
- 250 grams Gluten Free Flour of choice
- 1 heaped teaspoon baking powder
Place water, and orange juice into bowl. Arrange rhubarb in Varoma dish and tray and place ontop. 10mins/Varoma/Speed 2.
Set aside when complete. Dry bowl thoroughly.
Place rind, sugar and cinnamon in bowl and mill 30sec/speed 9. Remove and set aside.
No need to wash bowl when starting on Biscuit
Place sugar and Nutalx in bowl 30 sec/ Speed 4.
Add egg 30 sec/ Speed 4.
Add flour and baking powder and mix 20 sec/ Speed 4.
Scape down bowl and mix until combined 20 sec/ Speed 4.
Spread out half of biscuit mix onto lined biscuit tray.
Arrange steamed rhubarb over base and sprinkle with set aside orange sugar.
Roll out remaining mixture on a baking sheet and then transfer onto top of rhubarb to cover. Prick all over with a fork.
Bake in oven 180c for 40mins or until golden and crisp.
