Ricotta Orange Cake

  • 375 grams Fresh ricotta cheese
  • 375 grams castor sugar
  • 375 grams self raising sugar
  • 1 Orange rind from 1 orange no pith
  • 1 juice of 1 orange
  • 100 grams milk (add to orange juice to make up 100g)
  • 60 grams Butter melted
  • 4 eggs
  • icing sugar for dusting

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    1. Prehear Oven to 180C. (160C fan forced) Prepare Bundt Tin with butter or spray
  1. 2. Place orange rind and sugar in TM bowl and           

    mix 25sec/speed 7

     

    3. Insert Butterfly Whisk.  Add 375 gms of ricotta to TM bowl. 

    Mix 15 seconds/speed 4.

     

    4. Add 4 eggs .

    Mix 10 seconds/speed 4.

    Scrape down sides.

     

    5. Add 100gms of juice and milk combined, 60gms melted butter & 375gms self raising flour.

    Mix 20 seconds/speed 4.

     Scrape down bowl mix another 10 sec if required.

     

    6. Pour into prepared bundt tin and bake for 30-40 mins.

     

    7. Allow to cool for 10 minutes then turn out of tin on wire rack to cool completely.

     

    8. Dust with icing sugar once cool.

Tip

Liquid should be total of mixture of milk and orange juice. If orange is large then you will use less of the milk and vise versa. also some flours require a little more liquid so add the extra milk to achive a smooth batter.

    This cake is so yummy and delicious! I don't have a bundt tin but used a spring form tin. It took a little longer to cook. Approximately 50-60 minutes but turned out perfectly. Thank you for sharing such a great recipe and will most definitely will be making again!
