Rocky Road Fudge

  • 190 grams Butter
  • 600 grams caster sugar
  • 190 grams evaporated milk
  • 280 grams Pascalls Marshmallows
  • 1 teaspoon vanilla essence
  • 375 grams Chocolate melts, milk or dark
  • 100 grams macadamia nuts, unsalted
  • 100 grams glace cherries

Recipe's preparation

  1. Add chopped butter, sugar and evaporated milk to bowl and cook 8 mins 100 degrees speed 3.

  2. Scrape sides of bowl and then cook a further 20 mins, varoma, speed 2.

  3. Add marshmallows and vanilla to bowl and cook 1 minute, 100 degrees, speed 3.

  4. Add chocolate, macadamia nuts and cherries to the bowl. Stir on reverse, speed soft until combined and chocolate has melted.

  5. Pour into 2 x slice tins that have been lined with baking paper.

  6. Refrigerate for 2 hours or until firm and then slice into bite size pieces.

Tip

I have used milk chocolate because my kids don't like the richness of dark chocolate but personally I prefer half dark and half milk chocolate. You can also use all dark chocolate and it is beautiful. All milk chocolate makes it very sweet but what fudge isn't!
