Roma's lemon tea cake

Romas lemon tea cake

  • 2 lemon peel small or 1 large, No white pith
  • 150 g raw sugar
  • 115 g Butter, cubed
  • 2 eggs
  • 270 g Self Raising Flour
  • 150 g Milk, Can use any milk inc non dairy
  • 2 lemon juice
  • 50 g raw sugar

Recipe's preparation

  1. Preheat oven to 180 degrees. Line a loaf tin.

    Place lemon rind in mixing bowl. Mill 10 seconds speed 9.

    Scrape down sides and add raw sugar. Mill 10 seconds speed 9.

    Add butter and beat 30 seconds speed 4.

    Scrape down sides. Beat for anaother 30 seconds speed 4. While the blades are spinning, drop 1 egg at a time through hole in mixing bowl lid.

    Add flour and milk. Mix 10 seconds speed 4.

    Scrape down sides. Mix 5 seconds speed 4.

    Place in loaf tin and bake 30-40 mins.

    Towards end of baking time, Place lemon juice and last 50g of sugar in mxiing bowl. Heat 2 mins 50 degrees speed 2.

    Remove from oven and pour lemon juice mix over the cake while still in tin. Leave to cool in tin for 20 mins then place on wire rack to cool completely.
