Ingredients

Soft and Squishy Chocolate Cake egg & dairy free

  • 145 grams coconut oil
  • 475 grams water
  • 30 grams white vinegar
  • 375 grams plain flour
  • 300 grams white sugar
  • 100 grams brown sugar
  • 40 grams cocoa powder
  • 1 tsp vanilla powder, natural
  • 9 grams bicarbonate of soda
  • 9 grams baking powder

Decoration

  • icing sugar, For dusting

Recipe's preparation

  1. 1- Preheat oven to 180°c
  2. 2- Grease and line a 25cm/10in cake tin.
  3. 3- Add all wet ingredients to the thermomix bowl.
  4. 4- Add all dry ingredients to the thermomix bowl in the order listed.
  5. 5- Mix 25sec/sp5
  6. 6- Scrape sides and mix again, 10sec/sp5
  7. 7- Pour into prepared tin and bake at 180°c for 40 minutes. Cake is done when a skewer inserted in the middle comes out clean.
  8. 8- Transfer to a cooling rack and dust with icing sugar or desired frosting/ganache.

Tip

-Can be made as cupcakes or in a bar tin.
-Converts well to most gluten free flours.
-Once all ingredients are combined move quickly to the oven or you will lose a lot of the rise and have a denser cake.

    Soft and squishy, as promised. I didn't have enough coconut oil, so I put in what I had and added 1 egg. Needed to cook longer. Makes a large cake. Quick and easy and will be making it again.
