Sourdough hot cross buns

  • 240 grams Milk
  • 500 grams flour
  • 50 grams raw sugar
  • 100 gram Sourdough starter, bubbly
  • 1 tsp salt
  • 110 gram Butter, softened, cut into cubes
  • 1 egg
  • 200 grams fruit mix, (used for christmas cakes)
  • 2 tsp vanilla extract
  • 1.5 tsp ground cinnamon
  • 1.5 tsp ground nutmeg
  • .75 tsp ground cloves
  • 40 grams flour
  • 40 grams water
  • 1 tsp olive oil
  • 2 tbsp apricot jam
  • 1 tsp water

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.       If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

    Buns!
  1. place milk into the bowl, heat 2 mins 40 deg
  2. Add 500gr flour, sugar and salt
  3. Run dough mode for 2 mins, slowly dropping butter cubes through the measuring cup hole ensuring they are throughly mixed through the flour
  4. Add the egg and sour dough starter, run dough mode for 2 minutes.
  5. let dough rest in bowl for 30 mins. While this is resting pour the vanilla extract over the fruit mix.
  6. Add spices and fruit. Run dough mode for 10 minutes.
  7. Place kneaded dough into a lightly greased bowl, cover with wrap. Leave to prove at room temperature until tripled in size (approx 12-16 hours)
  8. Butter the bottom of a baking dish (30x20)
  9. Knock down dough and divide into 12 equal sized buns.
  10. Arrange the buns into the greased baking tray, cover with glad wrap and allow to prove again until doubled in size (approx 2 hours). When buns are almost proved, preheat oven to 200 deg
  11. Into a small bowl place 40gr flour, 40gr water and a tsp of olive oil, mix together to form a smooth paste.
  12. Place the paste into a piping bag, when the buns are proved, pipe crosses over.
  13. Place buns in the centre of the oven, reduce temp to 180 and bake for 30 mins
  14. When buns are cooked, mix the jam and 1tsp water together and brush over the buns to glaze
