Spiced Pumpkin Citrus Cake

  • 1 --- orange
  • 1 tbsp honey
  • 2 eggs
  • 1 tsp mixed spice
  • 200 grams sultanas
  • 250 grams WM SR flour
  • 1 tsp bicarbonate of soda

Recipe's preparation

  1. Preheat oven to 160˚C. Prepare a 20cm round or square cake pan - grease or line with baking paper.

    Roughly chop the pumpkin into cubes, then add 100g water, cook for 10 min / Varoma / speed 1. 

    Puree at speed 10 til smooth. Remove from bowl (no need to wash) - reserve 1 cup, store the rest for other uses.

    Chop the whole orange until finely grated. Scrape down the bowl. Return the pumpkin puree to the bowl. Add honey, eggs and spices and mix until combined.  Add sultanas and mix gently until evenly distributed through wet ingredients.

    Add flour and bicarb and mix Counter-clockwise operation speed 2 until combined.

     

    Place mixture in cake pan. Bake for 1.5 hrs.

Tip

 

Tip: I made muffin size cakes and cooked them for 20-odd minutes.


I also totally forgot to put the eggs in, but they still tasted fine! tmrc_emoticons.-)
