Stewed Apple Custard Tea Cake

Ingredients

Cake

  • 60 gram Butter
  • 1 tablespoon Vanilla Bean Paste
  • 250 gram brown sugar
  • 2 eggs
  • 2 cups plain flour, (can also use gluten free plain flour)
  • 320 gram sour cream
  • 2 teaspoon baking powder

Stewed Apple

  • 500 grams granny smith apples
  • 25 grams water
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 1/2 teaspoons brown sugar

Thick and Creamy Custard

  • 300 grams full cream milk
  • 200 grams Pouring Cream
  • 60-100 grams sugar
  • 50 grams cornflour
  • 2 eggs
  • 1 teaspoon vanilla extract

Recipe's preparation

    Thick and Creamy Custard
  1. Add sugar and cornflour to TM bowl for 10sec/Sp 9

    Scrape down sides of bowl.

    Add Milk, Cream, Eggs and Vanilla Extract to bowl.  Mix for 7mins/90C/Sp 5

    Pour into bowl and set aside to cool.

  2. Stewed Apple
  3. Peel and core apples, then cut into 2cm pieces.

    Place apple pieces and all other ingredients into TM.

    Set for100C/Counter-clockwise operation/Gentle stir setting for 10 mins.

     

  4. Cake
  5. Preheat oven to 180 degrees. Grease and line a 20cm round cake tin or loaf tin.

    Cream butter, sugar and vanilla together for 30secs/sp 4.

    Scrap down sides of bowl.

    Add eggs and beat for a further 20secs/sp 3.

    Add sour cream and beat for another 20secs/speed 4.

    Add in flour and baking soda. Combine well for 20secs/speed 4.

    Transfer into cake tin.

    Once Custard has cooled and thickened, pour over top of cake (should be approximately 2-3cm thick layer over cake).

    Pour Stewed Apple mix over custard

    Sprinkle with Brown Sugar (approximately 1-2 tblspn) to help caramelise apples

    Place in oven 45-60mins - check at 45 mins and if skewer comes cleanly out then it's done

    Allow to cool in tin

    Once cooled lift out and serve - ENJOY!

Tip

Can be made Gluten Free by substituting gluten free flour incake)

You can use Pears on top instead of Apple, or you can combine Apple and Rhubarb.  You can also add sultanas to Apple or Pear if you like as well - 15gms is plenty.
