  • 180g Butter
  • 1tsp each cloves, cinnamon and ginger
  • 50g fresh ginger, peeeled and cubed
  • 150g brown sugar
  • 150g treacle
  • 150g golden syrup
  • 1.25 teaspoon bicarb soda
  • 250g Milk
  • 2 eggs
  • 280g plain flour
  • 30g cocoa powder
  • 150g CADBURY milk chocolate chips

Recipe's preparation

  1. Pre-heat oven 160 degrees, fan forced. Line a 30cm x 20cm shallow baking tin with baking paper.

    Place fresh ginger in TM bowl, 3 seconds speed 9, set aside.

    Melt butter, 100 degrees, 2 minutes speed 2.

    Add spices, prepared fresh ginger, sugar, treacle, golden syrup. Cook 4 mins, 80 degrees speed 2.

    Add bicarb soda and eggs, insert butterfly and mix 30 seconds speed 4.

    Remove butterfly. Add flour, cocoa, and milk. Mix speed 6, 15 seconds,

    Add choc chips, reverse speed 2, 20 seconds.

    Scrape mixture into prepared tin. Cook in oven 45 mins.

    A few tweaks because of my pantry - didn't have treacle so I just used 2 lots of golden syrup and didn't have ground cloves so I used allspice. Left out choc chips as I didn't want it to be too chocolatey and iced with lemon butter icing. Cake worked out beautifully. Wonderful texture and just the right hit of ginger. Probably needed an extra 5 minutes cooking time than stated in the recipe. Great Christmas ginger baking idea and all my guests were impressed.

    Super easy and delicious! I only put about half of the fresh ginger in and it was plenty gingery enough for me!
