Absolutely delicious. I made a gluten free version, as husband is coeliac. Still very moist and light. Used less sugar, 135-140 grams in cake. Will definitely be saving this recipe

I've just made 4 of these (minus the syrup) as my 5yo son requested lime cake for his birthday - it's sensational.  Thanks so much for the recipe!

(and one day I'll try it with the syrup!)

  • If you pour the syrup over

If you pour the syrup over the cake does it all have to be eaten straight away or does it go soggy if left?

Really nice. Thanks. I'll probably double the syrup next time as the cake soaked it up well. Although I did cook the cake in a rectangle baking dish which may have been more surface area to cover.

Submitted by Fiona Hoskin on 19. November 2011 - 21:05.

Yumm! I love limes and I love cake and I don't mind getting sticky fingers so this sounds like a fantastic cake to me! It looks so light and fluffy in the photo and sounds so easy to make! Am sure this will become one of my favourites soon!
