Sticky Lime Cake
- 2 --- Limes, zest of
- 190 grams sugar
- 250 grams Butter, cubed
- 4 large eggs
- 280 grams Self Raising Flour
- 1 teaspoon baking powder
- 40 grams lime juice
"Sticky" Syrup
- 95 grams castor sugar
- 2 juice of 2 limes
Recipe's preparation
Pre-heat oven to 180C. Place the zest and sugar into TM bowl and mill for 8 seconds on speed 9. Add butter and mix for 30 seconds on speed 5. Scrape down bowl, (If required). Add the eggs and mix for 20 seconds on speed 5. Add the flour, bakinmg powder and lime juice. Mix for 30 seconds on speed 6. Place the mixture in a 20 cm cake tin, lightly greased and lined with baking paper. Bake in a moderate oven for approximately 45 minutes of until skewer comes out clean. Remove from oven and let stand for 10 minutes before pouring syrup over.
To make syrup, place both ingredients into clean TM bowl and cook for 2 minutes at 100C on speed 4 . Set aside until required. Pour syrup over hot cake and leave to cool in tin before turning out.

Really nice. Thanks. I'll probably double the syrup next time as the cake soaked it up well. Although I did cook the cake in a rectangle baking dish which may have been more surface area to cover.

Yumm! I love limes and I love cake and I don't mind getting sticky fingers so this sounds like a fantastic cake to me! It looks so light and fluffy in the photo and sounds so easy to make! Am sure this will become one of my favourites soon!
