- 3 eggs
- 70 gram Rapadura Sugar
- 200 gram plain flour
- 55 gram coconut oil
- 1 tsp baking soda
- 140 gram Milk
- 1 tsp vanilla essence

TM 5Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
Preheat oven to 180 degrees celcius
Grease a 12 capacity muffin pan or place muffin cups in each
Add all the ingredients EXCEPT the strawberry coulis to the TM bowl.
Mix for 30 seconds on speed 3 or until combined. You may need to use the spatula to scrape down any mixture from the sides
Spoon muffin mixture into each muffin cup until about 1/4 full
Place a teaspoon of strawberry coulis on top of each muffin cup
Spoon the remaining muffin mixture into the muffin cups
Place another teaspoon of strawberry coulis on top of each muffin cup
Swirl the strawberry coulis through each muffin
Bake in the oven for 20 minutes or until golden
Remove, allow to cool and enjoy!
Accessories you need
The strawberry coulis can be replaced with any fruit coulis really - I just used strawberry as had some left over from another recipe.
