Sugar Free Banana Date Muffins

Ingredients

12 piece(s)

  • 100 grams medjool dates pitted
  • 3 bananas peeled
  • 3 eggs
  • 370 grams Self Raising Flour
  • 1 teaspoon bicarb soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla essence

Recipe's preparation

  1. Preheat oven to 150 degrees

  2. Add dates to bowl and chop 10 seconds speed 7

  3. Add eggs vanilla and bananas, mix speed 5, 20 seconds

  4. Add flour, bicarb soda and cinnamon, mix 20 seconds speed 5. Scrape down sides and mix further 10 seconds spped 5.

  5. Spoon into lined muffin tins and bake for 18 minutes or until spring back when touched.

    I added 100ml of milk also, next time I'll probably add a couple of tablespoons of oil also. Good flavour though tmrc_emoticons.)

    My kids and partner are eating these fresh out the oven and loving them. Thanks for the recipe tmrc_emoticons.) I found they needed some milk, so added 150g. I also used spelt flour.
