Superhealthy Kids' Double Chocolate Banana Cake

  • 3 --- ripe bananas, medium-sized, approx. 100-120g each
  • 150 g brown sugar
  • 1 tsp vanilla extract
  • 1 --- egg, large
  • 100 g apple compote, aka apple puree, applesauce
  • 100 g wholemeal flour
  • 40 g cocoa powder
  • 1 tsp bicarbonate of soda
  • 1/2 tsp salt
  • 175 g dark chocolate chips
  • 20 g mini choc-chips, (optional)

      Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

    Preheat oven to 180 deg C. Grease a 20cm square baking dish
  1. Mix the bananas and brown sugar (10s / sp 6) until the bananas are mashed and the sugar is dissolved.
  2. Add the apple compote, vanilla, and egg (3s / sp.3)
  3. Add flour, cocoa powder, bicarbonate soda and salt (3s / sp. 2)
  4. Add chocolate chips and fold in. (2s / sp. 1)
  5. Pour batter into a greased 20cm square baking dish. Sprinkle the top with mini chocolate chips.
  6. Bake for 25-35 minutes. Check the center with a toothpick to determine doneness. Best eaten warm with a glass of milk.

Tip

This makes a rich fudgy pudding-like cake hence it's good served warm. Super healthy maybe not but it is wholemeal, with no added fats and little added sugar. Bananas can be used frozen if broken into pieces
