Sweet potato and vanilla bean pancakes

  • 1 portion small sweet potato, Peeled and roughly chopped
  • 1 litre Boiled water from kettle
  • 1 level teaspoon Vanilla Bean Paste
  • 50-60 grams Self Raising Flour

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Add peeled and chopped sweet potato to steaming basket. Then add boiled water from kettle to mixing bowl. Place steaming basket into place and cook 15min 100°C speed 2.
  2. Once sweet potato is cooked remove basket from mixing bowl with aid of spatula and disgard hot water. Place sweet potato into mixing bowl and purée 10 sec speed 4. Scrape down sides and repeat til smooth.
  3. Add in vanilla, flour and eggs. Blend for 20-30 seconds on speed 4. Scrape down and repeat if necessary.
    Cook on medium heat on a nonstick fry pan, 3-5mins each side or until cooked. These are thick pancakes and full of natural sweetness from the sweet potato. Seve with whatever toppings you desire.

Tip

Serve with toasted pecans and maple syrup.
This amont makes 5 pancakes. So it serves 1-2 people. Or could be added to lunch boxes as an additional item. Enjoy!
